Here is an extremely easy pasta dish.

1 pkg of SWEET Italian Sausage
1 small onion diced
1 Large can 28 ounces diced tomatoes
1 large can 28 ounces tomato puree
1 oz Vodka
3 oz Heavy Cream
1 pound of Penne cooked according to pkg directions.

Sautee (remove from casing) sweet italian sausage until brown add onion and sautee until clear. Do not use non stick pan. Add can of diced tomatoes to deglaze the pan. once you have gently scraped the bottom of the pan clean, then add the puree. Let simmer for 20 minutes. Add vodka and cream and stir. Add penne and simmer another 10 minutes.

The seasoning for this dish relies upon the fennel and garlic in the sausage. The vodka will burn off and leave just the slight bitter flavor, it will also cut some of the greasy texture. The heavy cream makes a perfect sauce finish.

This dish can be served with Parmesan cheese but really is not necessary.

YUM!!!

(well, sans onions cause i'm allergic to them. I get Extra Garlic!!!)

Tomato puree is so much nicer than tomato sauce and worth the extra cents.

I and DH make Penne Arubica…. 1 ˝ cups cooked penne (al dente), 8 oz tomato puree (or a small can of really good sauce that isn't watery), 1 can chopped clams, and a pinch of chili flakes (like you can get with take away pizza). Add the tomato sauce, clams and chili flakes in a generous sized pan and add the penne…simmer 10 minutes more (but don't overcook the penne). This is a quick meal and feeds 4 as a side dish…or two as main dish.
