How would you describe to a beginner how to tell the difference between tatting and say cro-tat?

Well, the hallmark of crochet of any kind is that that tops of the stitches are are nesting V shapes. Tatting doesn't have that. Tatting stitches are 2 verticals and a horizontal, with no V anywhere. All this with the caveat of stitches, either crochet or tatting, not under extreme distortion.
So anything with the Vs of crochet is at minimum, not all tatting.
