View Full Version : Twice baked Blue Cheese Potatoes

There is not a recipe set in stone.

I bake the desired number of potatoes.(Serving is half a potato per person)
Do not wrap potatoes in foil to bake just oil them.
Let them cool to where they can be handled with hands.
Cut each in half and scoop out the potato leaving about 1/2 inch of skin.
The scooped out potato is place in bow, add room temperature butter, cream cheese, black pepper to taste. MASH but do no over beat,,, they get gummy.
Add Chunks of crumbled Blue or Gorganzola cheese, gently stir.
Put this mixture back in to the skins. Refridge or bake.
They will hold one or two days at this stage.
When ready to serve bake 20 -25 minutes at 325 F or until 160 internal temp.

This sounds wonderful and I will add it to our Christmas Fare, I know Grandfather will love it.

Sounds really yummy! Only bad part is that it is too hot to have the oven on for long here now, but that will pass...

Soyloquesoy.. so you have a microwave??? They can be done that way but the skin will not be as good.

If there is any one who does not like Blue cheese, a good sharp cheddar very good, cut in tiny cubes.

That sounds really good. I think I will show it to my BF and see if he wants to make it. He is the better cook.

Yep, I have a microwave and occasionally have a "microwave" baked potato... thanks for the reminder. The recipe does sound great for the oven, though!
